Almond Pulp Date Nut Cocoa Ball
This is a festive holiday and party favorite I like to make and roll in coconut flakes during Christmas
Ingredients: 1 cup almond pulp *see my recipe below for making almond milk and almond pulp 1 cup raw walnuts 1 5oz package -Chopped fine in a Vitamix Blender ½ cup Medjool pitted dates (8-9 dates) chopped 1/3 cup Ghirardelli unsweetened 100% cocoa powder 3 tsp chia seeds ¼ tsp pink sea salt 3 tbsp creamy peanut butter For topping to roll balls in: ½ unsweet cocoa powder and ½ whole earth sweetener a blend of stevia & monk fruit |

Directions:
1. Add chopped walnuts to Kitchen Aid food processor and pulse, then add chopped dates, almond pulp, cocoa powder, chia seeds, and pulse to blend.
2. Scoop out a small amount to make about 1” balls and roll in your hand and then roll into the cocoa powder/ stevia mixture.
3. Store in the freezer for up to a month and take out and thaw enough to eat
*Makes approximately 18-20 balls
To make snow balls for Christmas
1/2 C ground dried unsweetened coconut flakes
1/2 tsp whole earth sweetener a blend of stevia & monk fruit
Grind in blender and form balls and roll into coconut

Date Sweetened Almond Milk and Pulp

1 ½ Cups 1 package raw almonds (soak overnight in water)
4-5 Cups cold water
6 large Medjool pitted dates
1 tsp almond extract
¼ tsp pink sea salt

2. Drain and rinse almonds
3. Add to blender almonds, dates, water, salt and almond extract and blend on high until liquid
4. Strain through a cheesecloth (save almond meal)
5. Store in an airtight container for up to three days
6. Shake before using
Almond pulp can be used in a recipe right away or cover and freeze to be used later, (see date-nut coco-balls in sweets chapter).
Or almond pulp can be baked and ground in a food processor into almond meal to be used in almond meal muffins (see beginnings chapter).and 45 minutes
